What is Lebanese Rice?
Lebanese rice is a classic Middle Eastern side dish. It features:
- Long-grain white rice
- Thin vermicelli noodles
- Olive oil
- Salt and cinnamon for flavor
The rice and noodles are toasted together in olive oil, giving the dish a nutty, aromatic taste.
Many people add nuts, such as pine nuts or almonds, on top. Some chopped parsley makes it look really nice, too.
How to Make Lebanese Rice

First, rinse and soak the rice. Rinsing helps separate the grains, making them fluffy instead of sticky.
Just place the rice in a bowl and run water over it. Use your hands to rub the grains together. Keep rinsing until the water runs clear instead of cloudy.
If you have time, let the rice soak for 20 minutes. If not, a quick rinse works well, too.
Toasting the Vermicelli
While the rice is soaking, start toasting the vermicelli noodles:
- Heat 1-2 Tbsp olive oil in a pot over medium heat
- Add the vermicelli and cook for 2-3 minutes, stirring frequently
- Let the noodles turn a nice golden brown color
Cooking the Rice
Now it’s time to add the soaked, drained rice to the pot with the toasted vermicelli.
Stir everything together well. This toasts the rice a bit, adding even more nutty flavor.
Season with salt, then carefully pour in 4 cups of boiling water (2 cups water per 1 cup rice).
Cover the pot and simmer on low for 15 minutes.
The Finishing Touches
After 15 minutes, turn off the heat and let the rice rest with the lid on for 5-10 more minutes.
Finally, fluff the rice up with a fork. Transfer to a serving bowl if desired.
Top with toasted nuts, such as pine nuts or almonds. Chopped parsley and a sprinkle of cinnamon add great color and taste, too.
